- Pumpkin 500 g
- Pearl barley 234 g
- Olive oil 2 tbsp
- Sugar 0.5 tbsp
- Onion 0.5 pcs
- White wine 60 ml
- Water 600 ml
- Canned peas 125 g
- Feta cheese 100 g
- Mint 15 g

Step 1

Wash and peel the pumpkin and onion. Rinse the mint. Rinse the pearl barley several times until the water is clear. Prepare a frying pan, parchment paper, and a baking sheet.
Step 2

Preheat the oven to 200°C. Cut the pumpkin into medium cubes. Mix them with sugar and 1 tbsp oil.
Step 3

Line a baking dish with parchment paper. Place the pumpkin pieces on top. Put the vegetable in the oven to bake for 50 minutes.

Place a frying pan on the heat and pour in the remaining oil. Let it heat up.
Step 5

Cut the onion into small cubes. Place them in the heated frying pan. Sauté for 3 minutes, stirring.
Step 6

Add the rinsed pearl barley and half of the baked pumpkin to the onion. Pour in the wine. Stir.
Step 7

Reduce the heat and let the pearl barley cook for 30 minutes. Gradually add water to the frying pan.
Step 8

Drain excess liquid from the green peas. Add them to the grain and mix well.
Step 9

When the pearl barley is ready, add the remaining pumpkin to it. Mix again.

Finely chop the mint. Crumble the feta by hand or with a fork.

Add the cheese and herbs to the cooked pearl barley. Heat the dish for 2 minutes, then remove from the stove and stir.

Transfer the pearl barley to a plate immediately after cooking. Garnish with basil and serve hot.
